Default Affidavit - Do you use "I" or "Respondent"?

If you were the respondent originally, that's what you remain for all motions - so should you refer to yourself as Respondent in the affidavit or just use the pronoun?

I’d say respondent... when a judge is reading they won’t want to be reading “I”

Yes, if you're writing out your affidavit info/points, use "I".

ex.
...I attach hereto as Exhibit X, the report blah blah blah...

...On several occasions I requested the Applicant to sign blah blah blah...

...I have volunteered at child's school since X date, and still do presently....
